My healthy strawberry marmalade – express recipe

Are you looking for the weekend as I do?
Can’t wait to sleep late! Oh wait, I have two kids who wake up – no matter what – at 6.30am. Dammit!
A very quick post to share my strawberry marmalade, ready in less than 30 minutes. Yes, that fast ! And it actually works with any fruits you like.

So here it goes, you will need :
  • 1 kg of fresh strawberry => you will end up with around 900 grams after you trimmed the stems
  • 100 – 150 g of organic cane sugar => it depends on how sweet you like it and how sweet the strawberries are
  • The juice of 1 lemon => if your lemon is organic you can use the zest of it!
  • 2 tbsp of chia seeds
  • I added few fresh leaves of verbena that give a hint of citrusy taste to it as my lemon was not organic but my leaves are
Directions:
  1. Wash the strawberries with cold water WITH the stem – to prevent the fruit from absorbing the water
  2. Trim the strawberry stems and roughly chop them – I quarter them yeah lazy girl
  3. Add them to a salad bowl
  4. Remove the zest of the lemon if you intend to use it => use a peeler or a knife, avoid the white part of the lemon as it has a bitter taste
  5. Squeeze the lemon juice on the strawberries and add the sugar
  6. I added the verbena leaves that I break with my fingers 
  7. Mix well and set it aside for minimum 2 hours, ideally overnight. The next morning the strawberries would have leaked most of its juice
  8. Pour the mixture into a saucepan
  9. Bring it to a boil and cook it on medium heat for around 10 minutes and stir occasionally
  10.  Stay close to prevent it from burning
  11. Once the pieces of strawberries are tender enough, turn off the heat and add the chia seeds
  12. Mix well and pour it into glass jar containers like I did. Be careful, it’s hot!
  13. Cover well with the lid, let the jars cool and store them in the refrigerator
  14. It should be good for two weeks – although they don’t last that long in our house

Isn’t it that simple?
My younger one swears by it, she loves to spread it on a slice of sourdough bread or freshly made French brioche. I scoop some in my plain dairy-free yogurt.
